Ingredients for 2 people:

For the roll:

  • 2 sea bass fillets

  • 500 g cherry tomatoes

  • 100 g of capers

  • 100 g of Taggiasca olives

  • 10 g of sesame

  • 10 g of pink peppercorns

  • Salt and pepper to taste

  • EVO oil to taste

  • Oregano and basil for flavoring

  • Powdered sugar for confit tomatoes

For the fennel cream:

  • 2 fennels

  • Salt and pepper to taste

  • EVO oil to taste

Procedure:

Preparation of confit cherry tomatoes:

  1. Cut the cherry tomatoes in half and place them on a baking tray.

  2. Season with EVO oil , salt , pepper , a little icing sugar , oregano and basil .

  3. Bake at 90°C for about 3 hours, until the cherry tomatoes are confit.

Preparation of the fennel cream:

  1. Clean the fennel and cut it into small pieces.

  2. Bring some water to the boil in a saucepan, add salt and, when the water starts to boil, add the chopped fennel .

  3. Cook for 8-10 minutes, then drain the fennel.

  4. Transfer the fennel to the blender , add salt , EVO oil , pepper and Matt Organic Coconut Vegetable Drink . Blend until you obtain a smooth and homogeneous cream.

Preparation of the sea bass roll:

  1. Clean the sea bass fillets and season them with salt , extra virgin olive oil and pepper .

  2. Grease an aluminum baking pan and place the rolled sea bass fillets inside.

  3. In the center of the paper cup, add the fresh cherry tomatoes cut in half, the Taggiasca olives , the capers and season with salt and pepper .

  4. Cook in a preheated oven at 180°C for approximately 10 minutes.

Plating:

  1. In a deep dish, pour a base of fennel cream .

  2. Place the sea bass roll on top and decorate with sesame seeds , capers , pink pepper and confit cherry tomatoes .
