Reginette with Calamari and Asparagus | Gourmet Dish with Coconut | Matt

Ingredients for 2 people:

For the dish:

  • 4 squids

  • 1 bunch of green asparagus

  • 1 litre of Organic Coconut Vegetable Drink Matt for reduction

  • 200 ml of Organic Matt Coconut Vegetable Drink for blending

  • 1 clove of garlic

  • Chili powder (to taste)

  • Salt and pepper to taste

  • EVO oil to taste

  • Chives for decoration

  • Fresh coconut for garnish

  • Edible flowers for decoration

Procedure:

Preparation of squid and asparagus:

  1. Clean the squid and cut them into slices. Set aside.

  2. Cut the fresh coconut into thin flakes for decoration and set aside.

  3. In a saucepan, pour 1 liter of the Matt Organic Coconut Vegetable Drink and reduce it over low heat until 80%. This reduction will be used to decorate the dish.

  4. Clean and cut the asparagus into thin slices.

Cooking:

  1. In a non-stick pan , add a drizzle of EVO oil and heat it. Add the crushed garlic clove and let it fry for a few moments.

  2. Add the calamari and asparagus and cook over medium heat for a few minutes. Season with salt and pepper , and add the chili pepper (quantity to taste).

  3. Blend with 200 ml of Matt Organic Coconut Vegetable Drink and cook for a few more minutes.

Preparation of the dough:

  1. In a separate pot, bring salted water to a boil for the pasta . Cook the reginette for half the cooking time indicated on the package.

  2. Drain the calamari and asparagus with a slotted spoon and set aside on a plate.

  3. Drain the pasta and put it in the pot where the calamari and asparagus were cooked. Continue cooking the pasta by "risottando" over medium heat, gradually adding the Matt Organic Coconut Vegetable Drink until cooked.

Plating:

  1. In a deep plate , create a queen 's nest in the center of the plate.

  2. Garnish with chives , a spoonful of coconut reduction , fresh coconut flakes and edible flowers .
