For the berry sauce:

For the base:

250 g of Matt Organic Ginger

50 g of bitter cocoa

300 g of fresh spreadable cheese

130 g sugar

4 tablespoons lemon juice

6 g of gelatine

100 ml whipping cream
Cheesecake preparation:
For the berry sauce:

Combine all ingredients and cook over medium heat until mixture reduces by 20%.
