Ingredients for 4 people:

For the pasta:

  • 5 whole eggs + 1 yolk

  • 5 g of EVO oil

  • 100 g of "00" flour

  • 20 g of re-milled semolina + more for processing

  • Salt to taste

To stir:

  • 1 knob of good quality butter

  • 20 g grated parmesan cheese

  • Cooking water to taste

For the pumpkin:

  • 100 g of peeled pumpkin

  • EVO oil to taste

  • 2 sprigs of marjoram

For the onion:

  • 100 g of finely chopped Tropea onion

  • 20 g of brown sugar

  • 10 g of EVO oil

  • 150 g of apple cider vinegar

  • 100 g of water

For the bread cream:

  • 150 g of Matt Organic Multigrain Bread

  • 200 g of Organic Matt Oat Vegetable Drink

  • A drizzle of EVO oil

  • Pumpkin seeds

  • Finely chopped rosemary

  • Edible flowers

Preparation:

For the pasta:

  1. Mix all the ingredients until you get a smooth and elastic dough.

  2. Let the dough rest in the refrigerator for at least half an hour.

  3. Roll out the dough not too thinly and cut out the tagliatelle.

For the onion:
